Probably a question for your local health department as I am sure they have a minimum temperature that they must be.
After they bake, immediately wrap them in a double layer of aluminum foil. Place them in a pan over another pan of boiling water. (Basically a modified double boiler.) That should keep them warm for a couple of hours.
P.S.- I love pistachio gelato!!!
I wrapped mine in pop up sheets of foil, then baked at 500F for 1.5 hours (up to 36 at a time, small oven). Then I’d toss them in empty stockpots to hold. Those lasted me an entire night since the temp of the potatoes all piled together kept them warm.
Check your local laws, but bake them, wrap in foil and keep warm in a commercial water bath unit with a tray over the water.
Remember, you have to get the tempurature to 161 degrees then maintain it at 140 degrees. BUT, check local laws.
The danger zone for bacteria is greater than 41 degrees (F) and less than 135 degrees (F).
Also, you can zap it in the micro before serving to again raise the tempurature but you will begin to dry it out.
